I found this recipe on another site and figured I’d share. Some of you may have seen this before.
Personally I HATE tuna, and since this is a cheap meal I figured I’d give it a try. I could eat this several times and I’m pretty picky!
Heat a nonstick skillet with 1tbsp olive oil over medium-high heat. Add 1/2 can white tuna in water, drained. Flake into small pieces with spoon. Season with black peper, spices you want (personally I used McCormack’s Montreal Chicken, Wasabi powder and red pepper flakes). When tuna appears to be heated and oil is semi-absobed, add 1/4 cup egg whites (2-3 whites and a whole egg) and reduce heat to medium-low. Add 2 slices of fat free cheddar, torn into strips. Scramble together until mixture is homogenous.
This makes 2 servings. Prep time: under 10 minutes.
I’ve made something similar in the past that tastes pretty damn good. Pour a tablespoon or two of olive oil in a pan and let it get hot. Now take a can of tuna or two put it in a bowl and mix with humus and other spices to taste. I like to add some tabasco and lemon as well. Now once everything is mixed up, make into patties, throw ‘um in the pan, and enjoy. Let them get nice and brown on the outside. I swear you’ll think you’re eating some good ol’ crab cakes.
