I like to put a finisher with high reps at the end of my hamstring workouts, because my main compounds are Good Mornings and Stiff Legs. I’m 6’2, with relatively long legs, so taller guys please chime in.
Personally i think Reverse Hypers are a far superior exercise and is just overall excellent to do, so i would definitely choose them.

I do back extensions as a finisher, but mainly because I don’t have access to a reverse hyper. If I did I would use both, as well as the GHR, and cycle them monthly or even weekly.
Why not leg curls?
Personally, I feel the strongest contraction in my hamstrings and glutes when to glute-ham raises. Sadly, not every gym is equipped with a GHR, what a shame.

But if you have a lat pulldown machine, you can do a poor man’s GHR.

I wish, lol. The pad is too thin so my knees would fall off. But you can do it in a seated calf raise, however make sure to load the fuck out of it so you don’t tilt the thing backward.
