Natural foods in Post workout Meal

Hi,
I saw that Dates had a Glycemic index of 103 with glucose as the base and 146 with white bread as the base. I was wondering how a date could have a glycemic index higher than pure glucose. I thought that with all of the fiber and other natural stuff it would surely slow the rate of absorbtion down. Does this therefore mean that eating dried dates after a workout could be just as effective at increasing insulin and therefore stopping the catabolic affects of cortisol as glucose or maltodextrin?

Parsnips were also very high 97 or 139 but I dont like the taste of them.

Also what do you think of Hydosylated whey protein and enazymatically predigested proteins? Is there a way one could possibly get a quickly absorbed protein naturally?
