My gym only has hex plates and have worked around this nuisance by doing singles or clusters. “Touch and go” method for lighter weights is somewhat doable, speed deadlifts is challenging. RDLs are no problem of course.
Has anyone found a good way to prevent the plates from rolling?

yup, pretty much this. I’d say just reset each rep. You don’t need to put it down and walk away and back, but make sure your setup is right for each rep (foot position etc) and just treat your sets as non-rest cluster sets.
Does your gym have any bumper plates at all? I’m guessing not, but if it does use those. Or at least use one bumper plate, they’re slightly bigger then the hex plates and will be the only ones that touch the ground because of it. Plus, it makes it really easy to load and unload the bar.
