Well, I can add some thoughts. I certainly don’t have a problem gaining weight, but I do find it hard to put on muscle. However, I am discovering some eating and training tips that help.
I think most weight problems, whether they be gaining or inability to gain, come down to problems with the pancreas and the adrenal glands. These are the glands that take a brutal beating in today’s hectic society. All the refined foods play havoc on the pancreas. Normally this raises serum insulin levels, which would result in weight gain.
However, if you muscles have become insulin resistant or your pancreas is not producing enough insulin it could cause difficulty in gaining weight. Eat whole foods and get rid of refined foods in your diet. You may want your doctor to check if you have become insulin resistent or have developed type II diabetes. These conditions can cause problems gaining weight.
The stress of modern life wrecks havoc on the adrenal glands. One thing that really affected me was getting off caffeine. It takes several months to adjust, but once the body adjusts you should notice you are able to put on muscle much easier. At least this has been my experience. You also need to make sure that you get proper rest and eliminate unnecessary stress (this could include training too frequently).
As far as gaining weight, I am on a program that seems to be working. I work out 3 days a week. Each day is a full-body circuit consisting of 3 exercises. I do 3 reps per exercise and repeat the circuit 16 times. I try to minimize rest times between exercises and complete the circuit in less than 40 minutes. I do the workout on alternating days (Sunday, Tuesday, and Thursday) The basic circuit is:
Day one: Deadlift, Barbell Bench Press, Dumbell Row.
Day two: Squat, Dumbell Bench Press, Barbell Row.
Day three: Stepup, Dip, Pullup.
I pick a weight for each exercise in which I never reach failure, but the last few circuits are quite taxing. I am basically managing fatique as described in Charles Staley’s Escalating Density Training. This is a program I just recently started, but it seems to be adding muscle nicely. It is basically a combination of the Peripheral Heart Action System, Staley’s EDT, and Waterbury’s Set-Rep Bible.
I basically find that higher volumes (such as 10X5 or 16X3) work best for me. The lower rep ranges keep the weight high. The basic concept behind the workout is to maximize the total amount of weight lifted each workout. This maximizes the stimulus for growth.
I have also found that consuming 7 meals a day with quite a bit of protein (over 1 gram per pound of body weight) helps to put on muscle.
I have read that people who have difficulty gaining weight often respond well to a period of fasting. Okay, I know your jaw just dropped. Why would one fast to gain weight? Let me share with you an important concept of gaining weight. It is not how much you eat that determines how much weight you gain. It is how much of what you eat that your body utilizes that determines how much weight you gain.
Just like any other part of the body, you digestive organs can get wore out. After a period of rest (fasting) they are often able to work more efficiently and actually metabolize the food you eat better. I would not use this idea as a first line defense for weight gain, but if nothing else works you may want to try fasting a few days and see what happens. You should be able to search this on the internet.
At this point in the game I am just starting to learn what works for me. What works for you may be different. Good luck.
Here is what I ate yesterday. I am bulk from 200-210:
10am wake up. 12oz milk, 1/2-1cup oats, all natural pb, bananna, some blueberries, 2 scoops of protein powder and a few ice cubes; all blended into a shake. Went back to sleep.
11am Wake up again. 2 cups of brown rice and 1 chicken breast with a lot of hot sauce. 16 oz milk.
1:30pm Watch TV till work. 2 black refried bean burritos with whole wheat tortillas, lots of mexican pre-shredded cheese and hot sauce, 16 oz milk. Then pack lunch for work.
4:00pm 1 cup of walnuts 1 cup of bannanna chips. 1 sobe green tea!
5:30pm 1/2 turkey&salami& provolone sandwich on whole wheat and 8oz milk. String cheese.
6:00pm An Orange
8:00pm 1/2 turkey&salami& provolone sandwich on whole wheat and 8oz milk. String cheese.
11:00pm Get off work and drive to the gym. Get there aroudn 11:30. Get home around 2:00am.
2:30am 16oz milk, 2 scoops protein powder. 5g creatine. Start watching TV to wind down my brain before sleep.
3:00am Two Beer boiled brautwerst sausage hotdogs on whole wheat bread(hot dog buns for the poor!) with some pre shredded cheese.
3:15am go to sleep.
I normally eat a lot less meat and more non-meat protein combos. PB sandwhiches, beans&rice, etc. Occasionally I’ll eat a vegetable and drink some V8.
I don’t know how many calories this is, and I don’t really care. I am putting on weight gradually, and that is all that matters.

This is all wrong. You gain weight by taking in more kcalories than your body needs in a day through basal metabolic rate plus activities. If you eat a buttload of food, you will gain weight. If you eat more than your body can put towards building muscle, the excess will be stored as adipose tissue.

Look, don’t just go with the one answer that told you what you wanted to hear. A can of tuna and a banana is not a meal. That’s surely under 300 calories? A flapjack and a pint of milk is also not a meal. In fact it looks like you’re only eating one real meal your whole day - your 6 pm steak and veg meal.
You’re simply not eating nearly as much as you think you are. “Can of tuna and a banana” is a meal someone might eat for weight LOSS.
Join a warehouse club like Sam’s and start buying 90% lean ground beef in bulk. Also buy cheese. And some chicken if you want it. But not the super lean chicken breasts. Each meal, eat at least 1/2 lb of meat and some cheese. Canned tuna is not for people trying to gain weight.

If this is your standard I’d say its a “light” 3000 cal / day.
The fact that you occasionally indulge in KFC and hit 7000 cals per day means very little.
Work your way up in cals until you start gaining. Its not unusual for guys with fast metabolisms to have to hit 4500 EACH AND EVERY DAY before starting to notice a change.
Oh… you feel stuffed? Who cares. Join the club. Most people don’t eat 6+ times per day because they are hungry.
On top of that, for a guy who has a hard time eating so much you sure seem to take pride in eating “clean”. This is a huge mistake for guys like you.
Here is my advice for what its worth. Eat tons of minced meat, whole eggs, whole milk, pasta and deserts for the next 4 months and get back to us on if you haven’t gained any weight.

This looks a lot like what I ate today, and I’m cutting.
You CAN eat more calories. You don’t HAVE to eat clean foods – you have a high metabolism. As long as you are getting enough protein, feel free to add some junk food: it’s the most calorically dense food available, and it’s not hard to eat. Why drink milk when you can drink chocolate milk?
Maybe you’d like some bacon and eggs with your breakfast?
Are you sure you’re putting enough butter and syrup on your flapjacks? Enough mayo on your tuna? Enough butter on your potatoes? enough gravy on your meat? Enough dressing on your salad? There are a lot of potential calories to be had at every meal if you think about it for a minute.
Skip the tuna, a comparable amount of red meat has about the same protein, and a lot more fat.
Liquid calories are absorbed the quickest, so you don’t stay full for long. Whole milk is probably the single most anabolic food there is. Milk is the only thing we eat that was “designed” by evolution to be eaten (by an animal that needs to gain hundreds of pounds in a short amount of time.) You are not a calf, but I’m sure you can do better than 3 pints a day if you put your mind to it.
Even when I’m trying to gain, I can’t eat like this, or I’ll get fat. I’m old, and my metabolism is not as fast as yours. I envy you. You say you’re desperate, but you haven’t even tried eating a pint of ice cream before bed. How hard is that?

McNug speaks the truth and all else is bullshit. The simple and immutable fact is that if you consume more calories than your burn then you WILL gain weight. Anything else anyone has to say is nonsense. Sure, thyroid conditions exist but hypothyroidish people aren’t exempt from this simple law of nature. So if you think you have a condition then go to the doc, that’s great, but don’t for a second think that you can’t gain weight.

Chickenmcnug and DTLV have it right. Read and re-read what Chickenmcnug is eating and follow it for a week. Then beat what he is eating by adding more dense foods like DTLV said.
There really are guys here who eat as much ice cream as possible before bed and they finally stated to gain. Your weight gainer might say 1000 cals per serving but 400 cals might be ground up sweaty socks and go right through you. Replace them with food.
Read how John Bernardi gained weight, one trick he had was to make an entire loaf of peanut butter sandwiches (raisin bread i think). He would eat them between his real meals.
Take advantage while you can, eat all you can now with crap thrown in and gain muscle. Us old folks can’t do it any more.
Get a jar of natural peanut butter in those shakes everyday. More if you can handle it. Heavy deads every week. If you dont gain weight off that then you’re a freak.
