1.25 lb sirloin that I’m making a taco bowl out of tonight and 2lb of ground venison that a co worker gave me for lunch tomorrow and Tuesday.
I’ve tried more than a couple types of game meat before but never venison. What do you think of it?
I like it, it’s not my favorite meat but it does the job. It behaves a lot like very lean beef when you cook it, and I normally season it like I would beef. It tastes different, but it’s still good. I hate using the word “gamey” but I don’t know a good word to replace it haha. It’s got a different funk to it.
The thing I like most about it is I know where it came from. I know who killed the animal and where, I know who cut it up and I know who packaged the steaks or ground the meat… Plus it’s free haha.
Got it. I like gamey meats so not an issue. My dad hunted a lot when I was younger and sometimes offered to bring home some venison for me, but I had an irrational fear of chronic wasting disease even though my dad assured me that the deer were fine. I’ll have to try it one day…
Those are some reasons why I like to buy a 1/4 cow from a farmer not too far from me. It’s lovely to be able to see how the farm is organized and how the animals are raised. I wish it were free! But it’s still by far cheaper than buying all those cuts individually from anywhere else.
For sure! It’s always a risk. I’m fairly confident that there isn’t a lot of that around here after checking out the CDC website but if you’re located in the Midwest I’d absolutely be at least aware that it is a possibility. I don’t know too much about the disease itself but after all the years of my family hunting and sharing meat we haven’t had any issues.
Yeah that does sound nice. I really wish I could find a place like that around here. I’m within an hour drive or two drive from farm country on all sides, but haven’t really spent the time to do any research on good cow farms in the area. That definitely seems like the way to do it.
I really like this piedmontese quarterly shipment thing I have. I’m excited to see what’s coming in the next box. I went through it pretty quickly though and I only have a chuck roast left haha.

Your hot sauce always looks particularly delicious in these photos. Do you have a preferred brand?
Yeah man, I like to switch between Cholula habanero, Cholula green pepper, tropical pepper company ghost pepper (sparingly) and Sriracha.
This is Sriracha. I usually put on just enough to give it a bite. With “true” hot sauce, I drown the food in it.
Another few that I really like are the El Yucateco habanero and jalapeno, but my grocery store stopped carrying them for some reason.
I was curious if it was Siracha or something else. I’m a fan of the rooster sauce for sure. Much appreciated!

Boiler Buffet
Not sure if you’re talking about my dinner or the list of meat that is being delivered to my doorstep. I don’t think I could justify a buffet of the piedmontese dude. I gave away one dynasty cut steak from the last box to my dad, I don’t think I could part with any more of them haha.
I’m a meat snob (insert jokes here). I’ve ordered a few cuts offline that promised to be ultra luxury and quality only to feel like I was eating a super cheap cut.
Is this stuff that good? Or just super cool because of the animal it comes from?
I think it’s great, personally. The dynasty stuff(actual piedmontese) is super lean and stayed tender and juicy. I was worried about it drying out, and it seemed like a lot of reviewers were too, but it turned out very, very good. The grass fed flanks were awesome too.
It’s tough to tell with the ground and tips though because I don’t really eat those straight up. I can find less expensive grass fed at Walmart, but it came in the package. Again, zero complaints.
I think it probably comes down to how well you cook it. I made sure to keep a temp probe in all of it so I didn’t screw it up haha. But, it is a good alternative to the really fatty shit I had been eating for a long time.
