If I’m not getting sore, is it ever OK to work out a muscle group 2 days in a row? Specifically squats?
How much are you squatting? It may be a good practice to squat every day for a week to improve technique as long as your loads/volume are not super high.
Dan John does this sometimes.
Not much weight, pretty much a beginner at powerlifting, and just started doing 5x5 with 125 lbs.

Like Zap said, if the load (weight)/volume (sets-reps) are relatively low, it’s fine to train on consecutive days.
The other option would be to do a drastically different workout on the following day. So if you do 5x5 on Monday, you could do something like 2x15 or 3x8 on Tuesday with no real problem.

Rippetoe claims that a lot of Olympic lifters squat every day. I only do it 3 times a week per his program and don’t ever get sore, but the weight I lift keeps going up.
If you are a beginner like I am, try increasing the load. I squat ONCE a week (Mondays) and it crushes me. I hit 185 (PR) for 6 reps on Monday which is definitely less than my 1RM, but nonetheless … if you up it to 135-155 I am sure you will start feeling some soreness.
By the 5th rep of eat set, are you feeling exhausted or are you feeling like you could easily bang out a few more reps?
Also, I should add, I add step ups and lunges after my squats to keep my quads loaded with work, which is part of the reason I still feel it 4 days later. Good luck.
