Whole Wheat Flour

Anyone know where whole wheat flour falls on the glycemic index? Also, does baking change this figure?

I think it depends on how it is processed into food, like how you make it into bread or pancakes, etc. According to Glycemic Index and Glycemic Load, whole wheat bread has about the same GI as white bread. I think you are better off eating white pasta (al dente, of course).
