Vegetables

OK, we all have to eat them. We know they’re a great carb source that won’t screw up our low carb diets, and I occasionally even enjoy them. But I find myself eating the same one’s over and over again and it gets a bit boring. Brocolli, Carrots, Cauliflower or Spinach, Onions and Tomatoes. What do you all eat for vegetables? Looking to mix it up a bit. On a related note my garden is in full bloom and I’m sitting on about 40 habanero peppers. So packed with capsaicin (the stuff that makes peppers hot)that it rates over 300,000 scovils (jalepanos rate 7,000 - 15,000) I nominate the habanero as T-Veggie of the year.

I mix it up by buying those frozen mixed bags of veggies. I eat them to my little hearts content. OH Habanero… Ok so me and several of my drinking buddies are all together drinking and making fahitas. One of my chums brings a bag of habs… Well I cut them up and toss them into my fahita… damn was that a hot ass fahita. I love hot food too but damn. Anywho when I cut them up I negelected to wash my hands afterward I went to take a leak. I get back to the poker table and it feels like my cock is on fire. I go up into the bathroom and look at it and I have chemical burns on the skin of my dick. yes, 3 degree chemical burns complete with broken blisters and open bleeding flesh. I was like wholly fuck. Not good. Moral is if you are going to eat those evil things wash up. If I ever eat them again I will not cut them and if I do I will wash thoroughly those oils are evil.

Salad greens of all sorts. Take 1/2 a bag full, add meat source of choice, a little cheese, some kidney and garbanzo beans if desired and add 1 T of olive oil and 1 T of red wine or balsamic vinegar. Great meal!

Another trick I have employed is to buy 7 different frozen veggie bags at the store and then eat 1 bag of veggies a day. It is a great way to get variety and it makes things pretty simple. Frozen veggie bags have endless varieties, so it is tough to get stuck eating the same thing day in and day out.

Green beans! Try this, it tastes unbelievably good… 1 can albacore tuna, 1-2 tbsp flax and/or olive oil, 1 tbsp balsamic vinegar, 1 1/2 cups cut green beans, and then add enough ground black pepper, garlic powder, extra spicy Mrs Dash, and nonfat parmesan cheese to taste. This is so good I’ll eat at least twice daily!!

I love brussel sprouts! They’re out of season now but should be back in stores soon. Kale is good also, steamed. I eat assorted squash every now and then as well.

Cut the veggies you listed above into chunks, add squash, jicama, bell peppers, shitake mushrooms. Stick the chunks on bamboo skewers. Soak them in a mixture of olive oil, balsamic vinager, rosemary, garlic poweder, a dice sized chunk of mashed ginger, overnight. Throw them on the grill next to your steak. Yum.

We get both frozen veggies and fresh. I will eat just about any vegie, too. Prefer them fresh in many cases - no fancy sauces, not steamed - just nice fresh veggies. Luckily I grew up eating a very Asian based diet - therefore a meal ain’t a meal unless there’s some type of vegetable(s) on my plate.

There's a great cookbook called "The Herb Farm" - I think there's some decent veggie recipes in it. We have it, I'll take a look when I get home....

Had a friend have to go to the hospital when making his own salsa which used some home-grown habeneros peppers. Apparently he dried them out and ground them up in the blender and ended up getting some habeneros powder residue in his eyes… great pepper (hottest in the world)… handle with care, tho!

Canned tuna or salmon, spinach, broccoli, carrots, different colored peppers and tomatoes. Add salad dressing, or use olive oil and spice rub of choice. Also, ReBar (www.healthcocanada.com) is a snack type bar which is made from fruits and veggies and tastes great.

Actually, Habanero & Scotch Bonnet are the same thing, except one has ripened more than the other. But neither of these are the hottest pepper in the world, from what I recall the Tepin is the hottest. However, I do love a good curry with a couple of Habaneros thrown in!

I have tried habanero peppers and damn they R hot…careful with them, my buddy could not talk for few minutes after having a little piece.
