I’m glad you said that. What most Americans consider Chinese food is kind of a misnomer when talking buffet-style/take-out food. I guess it also depends on where you live and what is available.
I grew up in fucking pinewoods of East TX and Chinese food was the restaurant of Vietnamese family who also owned convenience store. So that was Chinese enough for me at the time.
My favourite dish was the boiled fish, boiled carp actually.
They bring you out a live fish and you approve of it, then they prepare it and half hour later, this delicious fish is infront of you.

Actually dude when the rice is fat and short, the grain of the rice is actually poor. LONG Grain rice is the quality shit. You’ve been had! It’s the MSG in your mouth doing all that talking that makes you THINK it tastes real good.
Lol when we went to china… we had Americanized Chinese food(didn’t think it was until the tour guide mentioned it) just like here but tasted better.
However one lunch we were taken to a place that would serve traditional Chinese food… The tour guide warned us… said no ones going to like it. He was right… 120 people… all hated it(well except for the Chinese people in the band). Its completely different… can’t even describe it.
I used to work for a phone company in different remote offices, one office was located next door to a Chinese food (dive) place, smelled awesome! Everytime I left that office I wanted to go eat there but never did. One day while loading my truck up in the back parking lot one of the cooks comes out and throws a bucket of scraps on this big weed covered hill behind the dumpster.
The hill comes to life!! Cannot describe the sound, like a pack of wild dogs attacking a pack of cats or something, that fucker was feed 100’s of giant rats! I don’t know if he was fattening them up for the next days lunch or keeping them as pets, either way I never ate there.
Keeping in mind that there are many different types of cuisine in China, I’m not always a fan of Chinese food because it seems like they will make food out of fucking anything. Eyes, tails, ears, all the shit that we grind up for dog food in America, will be featured in a dish somewhere, and be popular.
Asian cultures cook their rice differently to make it sticky or clumpy. But it’s just plain old white rice. Use a rice cooker and a little more water and you can do the same thing at home.
Growing up half-Korean, I tend to like most Asian food (except fish). Teriyaki and bolgogi (Korean BBQ) are my favorites. I only wish where I live (Iowa) had better choices. I have found a decent Thai/Chinese place that I go to weekly. My area has many more Southeast Asians (Laos/Vietnam) than other Asians, so the restaurant choices gravitate there. I steer clear of buffets and fast food Chinese, because most of the time it is simply terrible. Those kinds of places have to pander to the white man.

There are many, many different types of white rice. The one most commonly used in Chinese cuisine is, I believe, Jasmine rice, but different cultures will favor different types. I believe Indian cuisine features Basmati rice, and sushi typically uses a short grain white rice called Japonica.
