Undulating is cool. You can work it into a hypertrophy focused, loosley structured plan too.
Heavy Day: 6 sets of 6 reps
Light Day: 10 sets of 10 reps
Medium Day: 8 sets of 8 reps
And after awhile if you decide its Strength Time you can work in “Ladders” easily, without stressing percentages.
You work up to a set of challenging 5, then 3, then 1.
And after that, when you feel “primed” you repeat the 5-3-1 ladder, trying to get a little heavier.
