I was wondering if people thought replacing conventional deadlifts with stiff legged deadlifts for the 5x10 on BBB cycles would be reasonable?
I feel my hamstrings are a weak link, compared to quads they look untrained and I wonder if it’s leaving a lot on the table with improving my lifts having such an important group weak. I’ve been doing GHRs also, but I wondered if doing the SLDL as well might help. I’ll still do conventional deadlifts on the FSL/SSL cycles.

Definitely reasonable. SLDL would serve the purpose of “5x10” better than conventionals would. And depending on your natural range of motion, you should consider doing them elevated so you can get as full a stretch as possible.

This is fine - just pick an arbitrary weight like 225 or 315. As said before, the key to BBB is getting the reps in. Hell, you can read this shit in the Russian manuals.
