Spices and Sauces.

alright so im looking into what spices and sauces are calorie “free”

I searched and found no thread like this…

so if you know of any sauces/spices/herbs that you can buy or make please add them

garlic powders my fav.

I like Zatarins creole seasoning and kraft has a lo cal bbq sauce.

Look into marinades and brines. You can add a lot of flavor with minimal calories. Also for sauces you can make a reduction out of a stock(broth), whether it is a chicken, beef or a fish stock. just start reducing it down on the stove.

You will get all the flavors concentrated into a nice syrupy sauce. Just don’t reduce it to far or it will be to salty.

I am a professional chef and these are some of the things that I do at my restaurant.

I like to make my own tomato sauce. Get a big can of crushed tomatoes, then add basil, oregano, garlic powder/salt, pepper, crushed red pepper, and maybe some chili powder. Minced onion can give it a little extra, too. No high fructose corn syrup needed.

What nobody mentionioned Mrs. Dash? southwest chiptole and garlic herb are my favorites + the original

as for sauces I remember seeing Ramsey from Hells kitchen did a bell pepper based sauce with like olive oil and stuff. was looking anabolic as hell with some meat on top of it.

edit:found it he uses it with this fish, looks badass ima make it one day. This bloke knows what he’s doing and he seems to have some big bollocks the way he lays the smackdown on people haha:D

pepper sauce

Italian seasoning, lemon or lime, balsamic vinegar, fresh basil (especially with lime), fresh oregano, green onions on everything. I have to put extra salt on everything. New York steak spice is tasty too.

Cayenne Pepper.

I put it on just about everything.

I love Tabasco on rice… or anything for that matter.

Artificial Ones: (all calorie free)
Walden Farms Thick BBQ Sauce
Walden Farms Pancake Syrup
Walden Farms Choc Syrup (amazing in shakes)
Davinci Flavorings (for coffee, shakes or cottage cheese)

Natural Ones:
Cumin+Pepper+Coriander+Paprika = chicken rub

Mrs. Dash spice blends

Rosemary (crush and rub over lamb especially)

Cayenne+salt+pepper+Apple Cider Vinegar = all purpose basting/dipping mix

Low Calorie:
Equal parts of capers and olives ground together to form a paste. Use as marinade on meats.

Cumin is BY FAR my favorite spice for grilling just about any meat. It adds a great smoky/spicy/bbq flavor without the heat you get from chilli powder, cayenne, and the super hottt spices like that.

my favorite spice rub combo for grilling is:
Cumin
Black Pepper
Salt

I put chili powder on basically anything. Tastes great with sweet potato with EVOO drizzled on top.

Sodium-Free Salt (uses potassium, which is better for your body)

Cinnamon (on my oats and sweet potatoes)

and that pepper with 3 kinds of pepper in it…it’s black/white/red and spicy…I love it.

Low calories in all, no sodium = no water retention.

i’m going to have to politely disagree about the whole low salt thing. i used to try to get as little salt as possible and as much potassium as possible. it would work, but eating anything salty made me hold 5ish lbs of water. it was a pain in the ass.

I decided to give an increased salt intake a try. i initially held some water, but that passed and it has made life much easier. sodium is now one less then i have look for on food packaging.

x2. I salt my foods (pretty liberally) and at first I noticed water retention. Now I don’t hold water, my body adjusted.

Me three! My workout clothes are covered in salt when I’m done, so I definitely need to add extra. I almost got myself into electrolyte trouble on a hike with too much sweating and water and not enough salty foods.

I use this stuff like ketchup, its delicious.

Also Tabasco, Mrs. Dash, Soya Sauce (if you’re not afraid of the whole estrogen thing), and almost anything in the Asian Goods Isle. Most of them are low in calories, high in flavor. I’m Chinese so I kinda grew up with these flavors and love them.

Read through Indian cookbooks. Once you drop the rice and lentils out of the recipes you’ve got a bunch of new low-cal sauce ideas that go great with meats.

There was an article over on FA a while back with some recipes for sauces.
