for assistance, it is already there in what I wrote. Three body parts each day, five sets of 10 to 20 reps per body part. You pick what exercise for each. If you think cables and side delta are what you need for shoulders, go ahead.

no sets are taken to failure. Your + set you do as many as you can just before failure. Your AMRAP set the same. You could probably get away with one assistance exercise to failure on a smaller body part if you want.

Like I said, that program is an option. You don’t have to do it. If you do, do it exactly as written even if you don’t think it’s enough. You’ll be surprised after the first six weeks.

In the past, it looks like your diet was extreme, and you were very thin. Now you look healthier, and you have gained some muscle, so you learned about eating better. Like you figured out how to eat not too much, but not too little. Just right. Keep this up while you continue to build.
Reading your log, it looks Like you are still taking lots of sets to failure, and training really “hard.” As you continue lifting, you’ll need to learn how hard to train to make gains, but not push yourself so much that it actually holds you back. A lot of times when I feel emotional, or run down, or just kind of bad, it’s because I’ve been training too hard. Sometimes it’s good to lower the weights a little, or to not go to failure so much. You feel better and recover faster.

thanks for posting workout… but i dont like 5 3 1… idk but for me its complected… what about this… and im only thinking outloaud… do my frist move like he did a low rep style lets say 5x5… then do assitince work for that move… at least this gonna be kinda smiler to my workut…

Absolutely, 5x5 main movement plus assistance for it is a fine way to train. Always devote most of your focus to the main movement though, even if you do maybe thee assistance exercises to one main.
Failure isn’t completely bad, but IMO its use is limited. For maybe one exercise per day for a smaller area (biceps, delta, etc) it’s probably fine. For your main movement, not so much. That’s because main movements are a skill. If you train to failure on those, you teach yourself bad habits. If you want to push yourself on main lifts, instead of going to failure just do more sets or cut your rest breaks down. If you set your load right, the last set of 5x5 will be HARD.
For food, I’d definitely add more carbs especially just before and after training, but add more protein too. You want your body not to have to look for material, you want to have it available.

It’s good you found jobs. Take whichever one you think is best for you both in terms of money and what you could learn by doing it. If they teach you Excel, you should be OK to do that one.
Definitely post videos of your main movements. Well be able to give you better advice if we see what you do.
For 5x5 main movements, you can of course do pretty much whatever you like. I’d say some kind of squat, some kind of bench, some kind of press and either some kind of deadlift or a different kind of squat. For progression try adding 10 lbs every other week for lower body and five lbs for upper. Like you suggested for assistance, what I suggested for 531 would work fine.
The way I deadlift is really a conventional DL with wide stance and a bit more glute and hip involvement than a plain old conventional, and with my hands inside.my legs. I use my glutes and hips to drive off the floor much more than quads, but I don’t drop my hops as low as for sumo. I didn’t deliberately start pulling this way. Two and a bit months ago I started pulling sumo but over time my stance kept moving in to where I had better balance and felt stronger.
If your hips shoot up, that could mean you’ve got weaker hamstrings than you need; and/or you’re not leaning back enough to get behind the bar.

Your squats look pretty decent. I’d probably go a tiny bit deeper but just to go past parallel. Other than that, keep doing what you’re doing.
