Sooo, I guess at some point I ruptured a disc in my lower back and it healed or “adhered” to a nerve in my back… Anyway, my PT doesn’t want me doing exercises that compress my spine. My legs are small and weak now. Are there any exercises I can do besides leg ext and hamstring curl that can help me?

Sounds to me that you are going to have to develop your legs through minimal loading and maximal volume. See if there is any leg exorcises or routines that you can probably do without hurting your back here www.youtube.com/user/scottabelcoaching .
split squat, step ups, bulgarian squat, hip extensions, various DB lunges. with that particular injury be wary of leg press.
