Pumped Up Granola

                           Homemade Granola

Found this recipe today and thought I would share. This is modified from the original and it turned out pretty good. I will double the M.D. next time. Whisked all the wet ingredients and added the dry individually in the order listed. I used a small convection oven, so I turned the heat down to 350 degrees.
1 large egg white
2 tsp. Olive oil
2 tsp. honey
1 scoop vanilla M.D.
2 tbsp. P.B. powder
2 tsp. ground cinnamon
Dash of nutmeg
2 tsp. ground Chia seed
1 cup old fashioned oats
Ā¼ cup walnuts chopped
How to make it

  1. Preheat your oven to 375 degrees Fahrenheit and cover with a sheet of parchment paper to prevent sticking. In a small bowl, combine all ingredients and toss to coat evenly.
  2. Spread the mixture flat on the cookie sheet and bake for 8 minutes. After 8 minutes, break up the granola pieces with a spatula or large spoon and bake for another 8 minutes.
    Allow to cool.
    I put half in the freezer to see how it stores. Meant to take a picture and no Nutrition info. Does taste good and its quick carbs.
