Kansas City people take their BBQ seriously too. I was let down when I moved to Dallas looking for BBQ 20+ years ago. Texas is known for grilled steaks, not BBQ.

Texas BBQ differs from Carolina BBQ too. We like vinegar-based sauce; they use a sugar base. It’s crazy!

That and brisket! I lived by the main Gates & Sons. Smelled the smoke from the smoker often. Those places burned down often too. Gates is the most known, but it isn’t the best. It’s more like 8th place if you live there. And they charge you for being so well known.

I have a strange liking for charred food, so burnt ends were heaven

The caloric density is depressing though

It’s such a treat, although the absence of chicken katsu is saddening.

So all but one post in the past 24 hrs is about food.

Even this one, which is just an observation, contains the word food twice.

FWIW I’m a native Texan and was recently lectured by my brother in what is, and isn’t, bbq. I’m with cybertron, gonna eat it, and you know what I mean regardless. I don’t have a smoker but if I make burgers over charcoal, or crock pot chicken with bbq sauce, I’m calling both bbq haha.

I’m a huge fan of BBQ done well - whilst the food scene out here is generally excellent (I’d say eating and eating well is a national pastime), you do struggle to find good Southern-style BBQ. The best and closest option (and again I’d say it is more a kitchen that plays with smoke) is Burnt Ends. But Christ you can rack up a stupidly large bill for some (admittedly) good food and still leave hungry. I took my wife the other week, we went through S$300 and I got home and made a bowl of porridge.

Good point. If I pour BBQ sauce on something, it becomes BBQ something. Hahahahaha!!! I used to tell my Italian friend I had Italian food when I ate at Olive Garden. It drove him nuts.
