Why couldn’t one eat low GI carbs with fat. We all know that eating a highi GI carb is an equation for fat gain due to the insulin response plus the fatty acids in the blood stream. What if you ate a low GI carb that doesn’t cause that much of a raise in blood sugar? And I believe I once heard that fat blunts the insulin spike and that is why we don’t eat fat in a post workout shake… any thoughts?

This has been discussed here before, which is probably why you’re not getting many responses. Combining low-GI carbs and fats (for example, nuts and beans) is fine.
