If I were going to try and increase weight by a certain % each week, for weighted dips would it make more sense to increase the added weight, or my bodyweight + the extra weight.

I’ve heard with chins and dips you should take a percentage of your body weight plus the extra weight.
However, I’ve noticed that for me, a 2.5 to 5 lb increase is usually enough. I think that’s a safer increase anyway, especially on something like dips.
If you find a 2.5 to 5 lb jump is too little or it’s too easy, just add more weight until it’s challenging for you.

Bodyweight + extra weight.
Otherwise, a small jump in weight could amount to a 100% increase and more, e.g.:
BW + 2,5 kg on week one
BW + 5 kg (a jump of 100% if you only consider added weight) on week two
