Absolutely fantastic. Those egg wraps are clutch yeah? About the only thing they could use is a touch more structural integrity.
Yeah - peeling them apart was touch and go there for a second.
Letting them crisp up for 4-5 seconds a side in the same pan I had just cooked my eggs and turkey bacon in definitely gave them some more structure.
Pork chops are in the oven right now - coated them in lite mayo before the “breading”. The pork rinds are sticky even after you crush them so they’re not super easy to coat with and it’s not the prettiest looking covering I’ve seen but hopefully it turns out well!
So - the pork rind coating is fragile - when I went to flip the pork chops the first time, the tongs pushed off a lot of the coating. Then, when I went to pull them out I knocked off even MORE of the coating before realizing the coating had gotten a bit mushy and had to put them back in under the broiler for a bit.
Not to worry - EASY fixes here. Flip them once, but use a fork, and then instead of taking them out when the timer hits, move the oven rack up high and put the broiler on - 2-3 minutes a side.
Anyways, after working through the struggles and losing half the coating, I got a crispy delicious coating, the sauerkraut was an awesome brand - roasted garlic - and I had it with mashed cauliflower. They were DELICIOUS - an 8/10, and next time it’ll be a 9 when I fix all the little snags I ran into.
I’m making my own mashed cauliflower in the future too - this stuff is like $5 for one container that my wife and I split and finish in one go.
Un-lifting-related side note:
I finished It Takes Two with my kid yesterday evening, and it may have been the most beautiful, versatile, enjoyable game I’ve ever played. If you have a SO or a kid who you have gamed with/would game with you, go get the game immediately.

Pulled or slightly tore something in my achilles/soleus yesterday at some point, not sure when but it’s difficult to walk on. No worries, doesn’t seem like a major injury, felt a bit better this morning.
The people who sold us our house put some weird rock-bordered mini garden next to the driveway, cutting into our lawn. Moved the rocks and used a big pitchfork with a foot plate to dig into the hard Virginia clay and break it up, and then spread some lime. Decent warm-up, ankle/calf feels a bit looser.
Wanted to do a bunch of 2-pump burpees but I’m not sure that shooting out into the burpee position with this ankle is a great idea. Will try it out, if it’s a no-no I’ll just pivot to a push/pull workout.
Ten 2-pump burpees in my ankle gave me a sharp warning not to do 90 more reps, so I listened.

So much good food to be had later - beef and broccoli, more pork chops, might go to a neighborhood BBQ with a rib competition.
The ribs sound good, but it also means having to hang with like 4 people I know and 30+ people I don’t, standing under tents because it’s about to start raining. I’m sure everyone else will have a good time because there’ll be a ton of beer there but it doesn’t sound like much fun to me at the moment. I wish there was a socially acceptable way to drive by slowly while people pass me foil-wrapped pieces of meat.
Messed up before - was 25 2-count flutter kicks. Still, that’s total 500 flutter kicks and my abs are spent.
Ate some beef and broccoli and was feeling kind of lazy so I figured I might try to loosen up my ankle on my assault bike.
Popped in some headphones and started off light intending just to do 15-20 minutes, but my youtube playlist kept queuing up awesome songs, and I ended up going pretty hard for 30 minutes - then, instead of getting on, I restarted the playlist and did another 30 minutes going even harder. Averaged 20 MPH exactly, as I finished up 20 miles just as the timer hit an hour.
DRENCHED in sweat. Mission accomplished.
Dinner:

Started by throwing together a mediterranean salad:
Chickpeas, red pepper, cucumber, red onion. Squeeze a lemon over top, add salt and pepper, white wine vinegar, and some super bougie EVOO - sprinkle of italian seasoning too, mixed it all up.
Heated up 2 pork chops from the night before in the air fryer and had them with a nice scoop of the salad.

Woke up, took the dog on a 2 mile walk out to a park with a gazebo and some monkey bars.

Went to the pool with my kids after doing all my errands. The neighborhood pool is sweet, only for HOA residents, has a swim team for the kids with free lessons, and is open all summer until 9PM. Water was freezing today, but jumped in and did a bunch of laps.
Came home, and made another small batch of pork chops - this time in the air fryer, cooking longer, flipping with a fork, etc. they were golden brown, tender on the inside, with an INSANE crunch. Chopped a pork chop up, put it on an egg white wrap with tzatziki sauce and the mediterranean salad I made yesterday.
Wife wanted something special tonight since we didn’t really grill or anything for Memorial day. It rained so I’m not grilling, but I did grab a nice ribeye and 3/4lb of shrimp - gonna pan fry the steak in the cast iron and do a lemon pepper garlic butter shrimp in the nonstick.
By the time we had time for ourselves to cook dinner, it was nearly 9 PM. Kids were balls of energy, you parents know how it is. Anyways, had a couple servings of the homemade beef & broccoli left along with some rice I had steamed the day before so we just ate that and saved the yummy dinner for tonight so we wouldn’t be eating at 10PM.
It’s rainy as all hell and generally gross outside. Currently figuring out an assault bike workout to do - probably interval sprints with a bunch of pushups on the side.

Post workout:
Had the same yesterday. Eggwhite “everything bagel” wrap, tzatziki, keto pork cutlet, mediterranean salad. Ate one extra mini helping of pork and the salad on the side to finish it off.
Have been making a real effort to finish every bite of meals I make. I hate wasting food, but we often rotate meals so much that one or two servings end up forgotten at the back of the fridge. Never having to worry about food security is enough of a blessing that I should try to not throw away food unnecessarily.
My stamina feels endless, by the way. Sleep still improving, physique still improving, weight down to 218 this morning.
I have been hyping myself up for steak & shrimp for ~24 hours now and it feels like it’s Christmas in a few hours.
I’ve been taking a freezer ziplock and adding to it every few days with whatever leftover meat I have. It’s labeled “carnivore chili”. Once it has enough stuff in it, I’m going to thaw it out, put it in the slow-cooker with some beef bone broth and have it be just that. Just like you noted, they’re small servings, but when compounded over several meals, it’s been adding up well.
That’s pretty awesome. I’ve been entertaining the idea of trying carnivore out for a while now, if for no other reason than simplicity’s sake. Being able to make an amalgameat-ion of leftovers seems like a sweet added benefit.
It’s really just been making a LOT of sense for me. I’m in the middle of writing that up. But even if it’s not carnivore, mixed leftovers is a classic in general. My wife grew up with “leftover chow fun” growing up in Hawaii, where they took whatever was leftover in the fridge at the end of the week and tossed it in egg noodles and sauce. She’s made me some BANGING leftover chow fun as a result, and it’s a great way to get the family in on the action too.
Pesto pasta with some clam sauce. Shrimp were perfect - just 1 minute a side in some garlic butter with lemon pepper seasoning and some fresh lemon squeezed in, steak seared while just salted, peppered at the end while resting.
It was everything I wanted.
Fasted Workout #1 @ 2:30 PM:

Set tabata timer for one round every 7 seconds, and hit the last two burpees as a double with no rest - which only took 2 seconds off since by the time I hit 50 I’d stand up and it would be beeping the countdown to the next round.
Absolutely miserable. Not that this is news to myself or anyone but the notion that people don’t have enough time to do any sort of workout is hilarious.
Had a couple scoops of protein, some yogurt and PB fit earlier.
Kids swim practice was at 6.
Rode my mountain bike there, took my water bottle and headphones and went to the playground next to the pool, and did 50 navy seals and 50 pullups, then rode back home.
Had about 3 forkfuls of the pesto pasta and around 12 of the leftover shrimp before my wife asked for the rest, haha.
Currently cooking a spaghetti squash for some noodles, and then using the pressure cooker to make a thai peanut chicken to go on top of it. Fresh ginger, green onions, peanut butter, chili garlic paste, coconut aminos, etc. - should be a super yummy dish.
