Right now, I finally got to being pretty routine with taking 1-2 protein shakes a day with about 1-2 scoops per shake of BNC True-Mass. I eat about three meals a day, generally ‘normal’ sized portions.
Try to consume whole food meals whenever possible, except for pre- and post-workout. Use shakes only when no other decent source of food/protein is available.
Pre-workout I’ve started using NOxplode, and post with Cell -Mass, is this a smart move?
No, see the link posted above. At this stage, I wouldn’t invest in fancy supplements, just the basics, e.g. fish oil, protein powder, possibly creatine, BCAAs and something like Biotest’s “Superfood” if you have the extra money.

I take 1-2 multivitamins a day, I generally take in a lot of coffee and have 3-4 fish oils a day.
I love coffee as well, but try to limit it to 2 cups a day, 3 at the most. Coffee is not the devil and even has some positive properties, overdoing it will most definitely have negative effects on your physique goals.
See above. If you choose to take creatine, simple creatine monohydrate is sufficient (and most cost efficient). They sell the stuff here.

I generally stick to low-fat things, like skim milk, etc, just worried about getting mass the wrong way sometimes.
No need to avoid fat. There is a lot of information on the issue on this site. Apart from that, some of the low fat products contain high sugar to compensate in the taste category. Watch your sugars and starches as well as - of course - overall calories instead if you’re concerned with keeping bodyfat in check.
