Had some sort of stomach virus rip through my household the past 9 days. I got it 2 Saturdays ago at 2 am and it was unrelenting until the following Tuesday. Little guy got it Sunday and then my wife got it last Wednesday. We’re all back in action, but it really took a toll on us physically.
Spring seems to be around the corner, and I’m thankful for a mild on-call week coming up.

Very, very low energy day today. Side work has picked up substantially, and on-call week was all quiet until yesterday where I got called out 3 times.

No lifting as of my last post… BUT…
My good friend from HS/my old band told me a few months ago that he was invited to London Ohio to meet Dave Tate at the eliteFTS gym, and he just got back yesterday.
He was featured on a table talk that will be out in June/July some time!! How fucking cool is that??! I am so incredibly happy for him and everything he has been building for the last 15+ years. With the amount of dedication he puts towards his goals, I can’t think of too many people as deserving as him for an opportunity and experience like that.
We spent a good 20 minutes on the phone chatting about it while I was working today and I am so excited to listen it. He said that he mentioned me by name, which means Dave Tate knows that I exist haha. Such a crazy thing to think about.
Holy cow, that’s an incredible development! So excited for your friend, and what a cool way to have an “in” there. Wild to think that Dave was writing articles for here way back when. That’s ultimately what got me on this site: reading through is transformation process.

Squats felt so much better this time around… note to self - cue eyes up.
It’s been a very busy couple weeks coming back from being sick. I’m exhausted in every single way right now, and I’m getting some pretty steady aches and pains in my knees, elbows and neck which typically indicates I need more sleep and food… but I ended up with almost 30 hrs into a side job this week. I just need to start my own company.
@T3hPwnisher he’s just is one of those people that sets his mind to something and does it with 110% focus (hmm, sounds like someone I know on this lifting website I’m on…). I can’t really say I’m surprised he’s gotten to the point of being in the upper echelon of the lifting world just seeing him exist from 13 years old to now, but I am grateful he’s receiving recognition for what he’s had to go through to get to this point. He’s also a really good guy so that makes it easy to root for him.

Left forearm and knee have been giving me some trouble the past week and a half, I’m trying to work through it but neither have gotten any better.
Putting this rack on the grill this afternoon. This is my first time doing it so hopefully I don’t totally screw them up.
They came out pretty good. It felt like there was a membrane or something in between the layers of meat between the bones. It seems impossible to trim around so maybe it just didn’t cook them quite long enough?
In any case, they’re gone now. My wife had 2 and I ate the rest.

Went for a little bit of fun at the end of this one. Had probably another 2-3 reps at 345, which is promising given how abysmal my recovery has been.
How long did you cook them for?
when I slow roast beef ribs in the oven (don’t have smoker), it usually takes 6 hours at 225F for there not to be a membrane feel
Maybe smoking is different thought
I did about 3 hours directly on the grill grates and 1-1.5 hours wrapped in pink butchers paper all around 285-315 ish. When I pulled them and temped them they were around 206 internal at the thickest rib and I let them rest for about an hour before cutting them up.
I tried to get the temp down a bit in the grill but was using hardwood charcoal which burns a bit hotter and I guess I went a little overkill with it haha. I must say that the higher temp rendered all the mushy and chewy fat out, which my wife appreciated!

Those did look fantastic though. Beef back ribs can be a mixed bag compared to short ribs.
Thanks dude! I was kind of worried about the fat content and my wife not wanting to eat them so I’m glad they worked out well for all, haha. I get to eat beef and my wife isn’t repulsed by my cooking!
I eat beef at about 1/10 the rate (and it’s typically ground beef) I used to and it is now considered a special occasion when I make it. I feel like a different person compared to a couple years ago in that regard.
@anna_5588 do you braise the ribs or just put them on a pan/grate? If you braise what kind of liquid do you use?
These were inexpensive enough that I’d like to take another stab at them but would like to use the certainty of the oven… Grilling is awesome but becomes difficult when it comes to babysitting both a grill and a toddler, haha
