My nitpicky advisor once made me redo a slide deck (for us only) because pictures were not perfectly centred.

Now whenever I make slidedecks, I always make sure the pictures are a tad bit off. Just bc I can

I had a manager once yell at me for cutting tomato rounds for burgers too evenly - it needed to be more irregular so people knew it was handcut.

So now when anything isn’t OCD worthy I just lean into it and say it’s homemade and charge twice as much.

As long as it is deliberate and artistic, you can get away with it.

Do you count them too? I do that with everything.

Not for tomatoes. Things like that are usually done by volume, so it might be a case of tomatoes that came in to process. Or you need to fill 4-400 3rd pans for service. Sometimes it’s “just don’t run out, I don’t care how.”

OCD has it’s place, but it shouldn’t be everywhere.

It kind of reminds me of that Dolly Parton quote where she says “You’d be suprised how much it takes to look this cheap.”

Last week Central Market made the world’s largest charcuterie board. I have questions! How long did this meat lay out sweltering? How many people dug throught it? Part of it was donated to the Central Texas Food Bank but… not sure even poor people want warmed up, dug through, fly buzzed food?
The whole thing grosses me out! I am the only one? What do you think?

Me too. Number one, this looks stupid. Why random-ass grapes, thyme, banana peppers, and watermelon radishes?

I did research - the event was for 2 hours and they had to have it all eaten by the end to win the award. So I’m going to assume 1 additional hour for set-up and since it’s on a deli island it has cooling elements underneath. That’s within a four-hour window, which should be fine.

They did win the record - but since tickets were only $10 and some of the brands they laid out are not cheap, so this actually looks like a successful way to clear out inventory while earning publicity. Food donations are heavily regulated but can be tax write offs.

It’s probably fine, flies are extra protein, good for them getting a record, and I’d look for the places that have specials during that window instead, and avoid any charcuterie special at a local restaurant for the next week.
