Look around for almond flour. It’s pretty good. Places like Whole Food’s and Trader Joe’s should carry it.
If you can’t find it you can make your own by roasting the almonds then putting them through a food processor until they’re the right consistency. Just be careful - the first time I tried it I ended up with a very tasty batch of almond butter by mistake.
There are not many low carb ‘flours,’ but almond is pretty good. Also you could try something like pea protein powder, or rice protein powder. Or unflavored whey.
If you choose almond, this batter is pretty tasty: mix eggs and vanilla Metabolic Drive with the almond flour. It’ll turn out great if you don’t overcook it. The Trader Joes almond four is what I use. I also put it in a lot of things you wouldn’t think of, like meat balls. It’s great if you don’t over-do it.
