What are the 'Other' Carbs?

Ok, I admit, this is a really basic kind of question that I should know the answer to. Either answer the question or don’t post because talking crap for an honest question is pointless.

In reading today’s article, I started looking at the nutritional information of quinoa. A 100g serving has 68g of carbs. 5 of those grams are dietary fiber and apparently there is no sugar.

My question is…what are the last 63g of carbs?

Sugars are simple carbohydrates such as glucose and fructose, which are monosaccharides. monosaccharides break down very quickly and raise blood sugar at high rate. The quinoa has a lot of polysaccharides which raise blood sugar very slowly.
