Veggies - Cooked vs Raw

I was sauteing my spinach last night and got to thinking if cooking the veggies for example; sauteing/steaming vegetable changes the nutritional value of them?

I think some nutrients will leech out into the water, and high temperatures can destroy others. I still cook my veggies a little because it makes them easier to digest, but on low temperature and for just a few minutes.

raw spinach leaves>cooked spinach
just m preferance
raw coliflower in humus
raw carrots

agh im a hippie!

Theres pros and cons for both sides.

I think cooking carrots and tomatoes amplifies its healthful benefits.

Raw spinach and cooked spinach have their own benefits.

Man to be honest, just get a blend of both and you’ll be good to go. Usually I’m hella lazy so I don’t cook my vegetables, unless I’m stirfrying a bunch of stuff together.

gotcha, just curious. Didn’t know if the diff was drastic, normally Popeye spinach leaves in olive oil/garlic with a burger. I munch on raw carrots and salads so…Humus and cauliflower?

Cauliflower sauteed in butter with garlic, onions, olive oil and bacon. oh yes

throw some turmeric powder in with that cauliflower (synergistic benefits) concoction and you amplify the benefits even more

raw onions
raw spinach
raw peppers
cooked broccoli
cooked carrots
raw and cooked tomatoes

that’s how i do it, raw broccoli tastes like cardboard
