Authentic stuff isn’t gelatinous, but MSG is king for sure. There’s probably more of it in “authentic” Chinese restaurants in China
Absolutely beautiful part of the world. Assuming the missus won’t let us emigrate, I’d definitely plan to retire around there.
Probably not, you’re definitely more of an expert on that than me. I spent many years spending lots of money on fancy restaurants though, and came to the conclusion that it just isn’t my thing.

My dad’s from Hunan province. Any dish not drowned in oil and pumped with sodium isn’t a dish.
The “low sodium” version of their favorite condiment has 5000+ mg sodium/100g
Seafords a nice place, I work pretty close to there in Saltdean at the minute.
I think down under is definitely one I might be able to get past the missus, when we first met we planned to do a working holiday down there together and it’s been off and on the table ever since, until the sprogs came along.
