Is having spruted whole grain bread ok to mix with cheese? I’m vegetarian but eat dairy, (milk and cheese, but not eggs). Cheese has a high fat content and the bread has high carbs so this goes against the rules of not mixing fat and carbs in the same meal, or is it not such a big issue? What would be the best type of cheese to use?
I read that Vince Gironda used to eat melted goats cheese on sprouted whole grain bread about three time a day, is goats cheese better than cheese made from cows milk? Is it lower in fat?

Fat is good. Unless you’re an endurance athlete running everywhere, your fat intake should be as-high-as, or exceed (I’m an advocate of this) your carbohydrate intake.
Cottage cheese would be good because it actually has significant amounts of quality protein. If you’re a veg, and don’t eat eggs, where’s your quality protein coming from?
Goat cheese tastes good, and is more likely to be closer to “natural” since it’s a smaller industry. Lactose is lactose. If you can digest it fine, you’re good, if it gives you trouble avoid it. It’s like with raw milk, some people insist it’s easier to digest. If it is, it’s because it has more nutrients and “good stuff” left in it that leaves people feeling better: you either produce enough lactase to comfortably digest lactose or you don’t.
