So, I was preparing a couple chicken breasts and a salad when I realized I had no carbs in the house except oats. I planned to just have some oatmeal and blueberries for desert when I had a thought… (not my FIRST one, but close). How would a side dish of oatmeal taste with the chicken. I steamed up a cup of Quaker’s in the uWave and added some salt, pepper, parsley and butter. It was great.
Tasted like a cross between a rice and a pasta dish, think orzo or risotto. Preparation time less than 2 minutes. I’m going to try some more complex recipes, e.g. parmesan cheese, herbs, chopped nuts, shallots, etc.
Anyone else do this? If you have some interesting oatmeal recipes pass them along.
