I just picked up some bison from the store, and was looking to get some good seasoning/cooking tips. I already did a quick search and found mixing an egg with the meat before cooking helps, anything else?
What form is the meat in? If you are mixing an egg with it, I assume you bought it ground. Personally, I find that some kosher salt and freshly ground pepper can make any type of meat taste great, provided that it isn’t overcooked. If you come up with anything that tastes good, pass it along.
I just treat it like beef.
Mix in minced garlic, fennel seed, ground cumin and ground coriander, form into patties (without the egg). Saute the patty a few minutes on one side (without touching it, i.e., don’t move the patty or squish it with a spatula), flip it and do the same on the other side. Season with kosher salt and fresh ground pepper. Eat (without a bun) with black beans and a salad.
garlic, salt, pepper. if you want to pair it with a pasta and an olive oil sauce add some basil.

This sounds really good. I am going to have to try this.
For me it�??s garlic, salt, and pepper, mixed into olive oil. The meat sucks it all right up while it spews out all the water inside.
