Z, you’re a man after my own heart. Your wife and children must appreciate your skills in the kitchen. I’ll be over for 6.

Onion, Garlic, Cumin, Coriander, Cayenne, pepper, cilantro…

Yeah, I’m gonna have to try that.

Hehe, My wife loves my cooking, except when my experiments fail. Here’s another one…

mmmm Shrimp/coconut/okra fusion

10-12 Large Shrimp
10-12 Small Okra
2 Tbsp Canola Oil
1 small onion - finely diced
1/4 tsp turmeric powder
1 Tsp Garlic Paste
2 Tsp Ginger Paste
1 tsp Chili Flakes
1 Tbsp Peanut Butter
2 Tbsp UNSWEETENED shredded coconut
2 tbsp Hoisin Sauce
1/4 cup Lemon Juice
1/2 cup Coconut Milk
Salt to taste (I use 1/2 tsp)
1 tomato diced
fresh cilantro finely chopped (to taste preference)

  • Heat up a pan and add the oil
  • Stir in the onions and saute until golden brown on medium heat
  • Add the turmeric, garlic, ginger, peanut butter and chili flakes. Stir
  • Toss in the coconut, shrimp and okra. Stir around and fry up the ingredients a little. Less than a minute. Don’t over fry.
  • Add the lemon juice, coconut milk, salt and hoisin sauce. Stir and bring to a boil over medium/low heat.
  • Cover and let cook for 6-8 minutes over medium/low heat. Don’t overcook or the shrimp will get tough and the okra will break apart into a slimy mess.
  • Serve garnished with Cilantro and Fresh Diced Tomatoes

I like to serve this over a bed of boiled Basmati rice.

As Jim Carrey’s character said in Dumb and Dumber:

“mmmmm, that sounds good. I think I’ll have that.”

dessert:

Chocolate Pudding Pie

crust( i have give credit to John K. Williams Ph.d for this awesome crust)

1 Cup graham cracker crumbs(break up and put into blender)
1/4 Cup ground flax seeds
1/4 Cup raw oat bran
1 oz. fat free cream cheese
1/3 cup water

filling:
1 package chocolate fat free, sugar free pudding
1 1/2 cup cold fat free milk
2-3 scoops van. or chocolate protein powder
2 cups of fat free cottage cheese(smooth out in blender if you dont like white clumps)

after spreading crust in a 8-9" pie pan dump in pudding mixture and freeze. NOTE:after about an hour in the freezer slice the pie up so you dont have to take a hack saw to it later.

this is a great P+C snack, great for post workout after your shake.this pie is put together super quick so there are no excuses not to try it!!

please post some feedback so i know if i should post more of my recipes.
Enjoy
Dave

That sounds good… I think the last dessert I made was Sesame Street Cookies.

I’ll get me wife to make it. She’s the dessert expert

hey Z-man what are those cookies like? was there a good T-man spin to it?

I got the idea because i have been putting scoops of protein powder in sugar free pudding for a while, then i stumbled upon John Williams recipes on John Beradi’s site. This is a chocolate lovers variation on his cheesecake(which is a must make!)

One more Note, try not to eat all the graham cracker crust before you actually use it for the pie. It is soooo gooood…

I can’t remember. I was 7 years old.

A very easy Fish Recipe:

1 medium/large whitefish or tilapia - Gutted, scaled and cleaned

in a bowl combine:
2 diced tomatoes
1 chopped onion
1/4 cup Lemon Juice
1 tsp soy sauce
1/4 cup chopped cilantro
1 tsp Garlic Paste
1 tsp Ginger Paste
1 tsp salt (I always use Kosher salt)

  • In a narrow baking pan, brush the bottom with oil and spread a part of the mixture alng the bottom.
  • Make 3 shallow slashes diagonally on each side of the fish.
  • PLace the fish on top of the mixture on the bottom of the pan. Put the rest of the mixture inside the fish and on top.
  • Cover the pan with Tin Fiol and bake for 12-15 minutes or until the fish flakes easily from the bone with a fork.
  • Plate onto a platter. garnish with a little fresh cilantro and Enjoy!
  • This dish presents nicely and goes well with boiled rice.

that Tilapia recipe sounds good…think i may buy the materials i need tonight and cook it tomorrow night…

Something that would really help would be a nutrient content breakdown for each of these recipes, Z-Man.

I have no clue what the nutrient content is. Maybe someone with some expertise in nutrition can analyze them.

Instead sour cream or cheddar cheese, try some low fat cottage cheese.

Z-Man, any low-carb/no-carb recipes?

awesome shake

just made this for breakfast today and figured i would share:

Yam Shake

i bake yams every week so i always have some on hand.

1 decent sized yam skinned
10 oz water
handfull of ice cubes
2 scoops of vanilla protein powder
spoonful of raw oatmeal
cinnamon,and nutmeg

blend and enjoy…this was a perfect filling breakfast!

Here’s one I like.

Pre or Post workout shake:

1 cup non-fat vanilla soy drink
1 cup light cranberry juice (aspartame sweetened)
2-3 scoops low carb low lactose protein powder
1 cup frozen strawberries
Combine in blender until smooth.

If you’re not worried about carbs use regular sweetened juice.
If you’re worried about the soy I dunno, I am fairly lactose intolerant.
I tried working on am working on a dairy alternative, including non-fat lactaid milk, vanilla extract and honey, but it didn’t pan out. Tasted off - I think the enzymes in the lactaid munch on the protien powder and make it taste “off”.
