Roasted Almonds

How does roasting almonds in the oven change their nutritional benefits? I don’t like raw almonds but I love roasted almonds so I wanted to make sure that they are still beneficial to eat. Otherwise I may stop buying them and opt for walnut since they are tastier in their raw state.

I saw something about it messes with the fats and it causes like a deep fried kinda result if over roasted. Im not sure if im right or not 100%

It bakes the oils out of them. Which is why they become crunchy. A lot of the almonds benefit is in it’s natural oils. I think it loses some of it’s nutritional content this way. I agree they taste better toasted, but you don’t get the full nutritents from em that way.

Actually, today I picked up a bag of roasted almonds from starbucks for a quicksnackie and it doesn’t compare to the raw ones at costco.

I just don’t like the way they taste. Simple as that.

I don’t think that any significant amount of oil is lost during roasting, at least not in my experience of doing it myself.
