That’s a very cool setup you have for long cooks- something you designed yourself??
Hey @boilerman , the drum smoker was a combined effort between a number of us homebrewers back in the day. We all built similar versions. But essentially a 44 gallon drum, and a lid off an old weber bbq (the lids fit perfectly over the drum).
A few bolts to hold your grille (I have 2 grilles in mine so can do wings etc too)
You can adjust air flow manually of course, just adjust the ball valves at the bottom, but with a computer fan (in block box) linked to a temperature sensor (grey box) you can dial it in to perfection and sleep soundly during longer cooks. I also have wireless twin probe sensors for the meat and air temperatures, the former to confirm the meat’s cooked.
But yep a fun little engineering project from many years ago. It doesn’t get used enough, but I need to get back into the slow cooks for sure. Meat is soooo tasty and tender.

It took me a while to figure that out about folks from Australia. Yep, BBQ is definitely a type of food here in the south. I had a good friend from Australia about 10 years ago and he would always refer the the act of cooking on the grill as “a barbecue.” I was confused and thought that he was just drunk, which he was, but eventually I figured it out the difference. ![]()
That brisket and lamb looks amazing. Cool drum smoker as well. I have the green egg and very much enjoy being able to dial in the temperature using air intake/outtake like you do on yours. It really helps. Some excellent work going on in here in the gym too!
