Sure, every protein is going to have a unique amino-acid profile; this is the reason it is recommended to eat a variety of protein sources. This is not limited to chicken or turkey.
However, one need not panic if one eats only chicken or only turkey, or only beef for a few days, either. Failure to eat an immensely diverse amino acid profile isn’t going to hinder your gains; lack of calories, however, will.

It also helps you to stick to your nutritional plan because you’re not eating the same boring thing every day. My friends and roommates don’t think that my diet have enough variety (it’s always meat, vegetables, and the occasional condiments) but I never get bored eating those food so it’s working for me.
