Since people have posted on here how much they love canned pumpkin I thought I’d point out that you can get pumpkins really cheap right now. This year I grew two pumpkins and a farmer gave me two huge ones.
It’s a lot of work but I prpare them by cutting in half, scooping out and baking at 350F for 1 to 1 1/2 hours. Then I scoop out the flesh, puree with a blender and freeze in ice cube trays. My freezer must have about 30 pounds of frozen pumpkin cubes that can be used in soups, sauces, breads and shakes.
If anyone knows how to prepare the seeds so the kernel comes away from the shell easily, please let me know. I like squirrels but I really don’t want to share.
