Canned Pumpkin Goodness

I don’t know if this is the case everywhere, but canned pumpkin is only available in my local grocery stores betwixt November and February. Such a shame since this stuff is delicious and nutritious. Does anyone have any favorite pumpkin dishes they like to make? I made some Choco pumpkin pudding that is out of this world:

1 can pumpkin
1-2 tablespoons natural pb
1 scoop chocolate low carb Metabolic Drive

Put them in a bowl, mix it up, throw in the fridge. Add a little nutmeg or cinnamon and enjoy.

Buy pumpkin pie spice and add with vanilla Metabolic Drive. Then, you can pretend you are eating pumpkin pie. Tastes good when warm, too!

TC actually recommended this food in an article. The first bite of each batch I make is in his honor.

Are you asking if I add any additional sweeteners, or are you asking if I’m looking for sweetened or unsweetened recipes?

If it’s the former- I add no sugar/brown sugar/splenda/etc.

I can vouch for this combo tastes amazing, is a standard snack for me. I sometimes also add a handful of frozen berries mix them in and leave it to sit for 5-10 minutes, AMAZING

My wife makes awesome pumpkin pancakes! They are not good for my low carb diet, but I love them on the weekend for a carb reload. I am not sure of the recipe, I think she makes regular pancake batter, then adds 1/2 can of pumpkin and adds pumpkin pie spice and nutmeg? sounds about right.

I mix pumpkin and cottage cheese, or pumpkin and oatmeal. I also add in cinnamon and splenda to make it taste just like pumpkin pie. Really good

Sorry. I meant is the canned pumpkin sweetened. I played with it this weekend and I saw two kinds in the store. I guess one is more meant for making pie.

Oh ok. The only kind I can get is unsweetened. You’re right, the other kind must be for making pie.

Pumpkin Curry is good. I would prefer to use fresh Pumpkin from an Indian food store rather than frozen(frozen veg tends to taste different, at least to my palate).

any chance you would post the recipe?

I mix my canned pumpkin with cayenne pepper, celery, clinatro, a little chicken stock and chopped chicken. Put in oiled (olive oil) pie pan and heat. Damn tasty.

So apparently pumpkin has a really really high GI rating, like over 100! Should we be worried then about consuming pumpkin throughout the day, and how it might affect our insulin levels/control? Or is it not an issue since it is so low cal/high fiber?

I am not worried about it but I would only be eating pumpkin on my refeed days as I am on the AD.

Do you have insulin issues or are you training for a competition?

Pumpkin has a very, very low glycemic load.

I just add a scoop of Metabolic Drive, a half a can of pumpkin, and two tablespoons of milled flax seed to a basic waffle recipe:

BASIC WAFFLES

2 eggs, separated
2 c. buttermilk or sour milk
2 c. flour
2 tsp. baking powder
1 tsp. soda
1 tsp. salt
1/2 c. butter, melted

Preheat waffle iron. Place egg yolks in large bowl, whites in small bowl. To yolks, add buttermilk; beat well. Add flour, baking powder, soda and salt. Beat until smooth. Stir in melted butter. Beat egg whites until soft peaks form. Fold into batter. Bake in iron, medium heat for 5-8 minutes or until steaming stops and waffle is golden brown.

The batter should not be too thin, but should still be pourable.

        When I was on the AD it was one of my favorite snacks. I made a kind of pseudo pumpkin ice cream that was doable on the weekdays and was delicious at night for a high protein low carb snack. It isn't loaded with carbs at all, look on a can of pure pumpkin and you'll see. I love the shit, it's full of some fantastic vitamins and other goodies. Good thread.
