I eat a lot of pickles and pickled okra.
Are they still beneficial in this form?

It depends. If they are lacto-fermented, the way pickles used to be made, then they are great. If they are just your run-of-the mill commercial pickles, then, no, they are not necessarily bad but not that good for you either.
For old-fashioned style lacto-fermented pickles, go to Whole Foods and look in the refrigerated department. There is a good brand called “Bubbies” that I get…pickled cucumbers and sauerkraut. Also, not a bad price.
Otherwise, try ethnic stores…like a place that sells German or Russian food. Authentic Russian stores are good for this kind of stuff. Also try Asian supermarkets…See if they have Kim-Chee made the old-fashioned way (just be careful there is no added MSG).
As the Chinese diet does not contain a lot of raw food (save fruits) pickles have been an important part of their diet, so you will see stuff like pickled turnip greens, etc VERY VERY GOOD FOR YOU!
I pickle my own cucumbers with vinegar and spices. As far as I know a cuke pickled in vinegar has the same nutritional profile as a cucumber.
Mmm…
Pickled turnip greens…
I’m gonna get me some.
Thanks guys
What about Eggs?

I pickle those in vinegar and spices too. Great midnight, mid-morning, mid-afternoon snack. Six grams of protein, pickled or not.
Watch the sodium on store bought. They can be a tad high.
Thanks again guys.
