Pemmican

I just discovered the ultimate food for when you wake up at night to eat while on a gaining cycle.

Pemmican is basically ground up beef jerky (to a coarse powder) mixed with some fat. The addition I made to the recipe is some liver to make it a very nutritous food for your P+F meal.

Here’s generally what the recipe looks like:

3 lbs lean beef
1 lb beef suet or tallow
(optional) 1/2 cup dried cranberries

Slice the been into thin strips and dehydrate.

Cut suet into small pieces and place in a pan and cook over medium to high heat and allow to boil until any pieces of skin, meat, or gristle have become crisp. Pour hot fat through a strainer. Should yield approx. 3/4 cup rendered fat.

Cut the dried beef up into small pieces and put in a food processor until it’s reduced to a coarse powder. in a bowl mix the beef and fat together.

It can be formed into bars when it cools a bit, and can be kept at room temperature (!!)

The change I made is substitue 4 ounces of beef wtih 4 ounces of liver.

This will make 3 cups of pemmican, and the macronutrient profile looks something like this:

3000 calories
300g of protein
196g of fat

Loads of vitamin A, B6, a crapload of B12, and lots of zinc.

Now THAT’S a great nighttime meal for gaining cycles! 3 lbs of beef compressed down to 3 cups in an easy to eat form (since the jerky is powdered).

I’ll make sure to try it and let yall know what it’s like.

Is that saturated fat only Neil? If so I’d cut the fat content in half and mix in cold milled flax seed and flax oil for the other half. Is the beef jerky prepackaged? If so try to make sure its as natural as possible- no MSG, not too much sodium or sugar. No problems with the saturated fat on a mass building cycle but you still need to manage it well and keep it decently low. The cranberries I would leave out as that would probably add too much sugar. I’d put in some fiber (that is another good reason for the cold milled whole flax seed). Some sort of nut would probably work best I’m thinking ground walnuts. My addition to the recipe might make it taste like shit though it’ll be a bit more healthy.

Due to the nature of suet, yes, mostly saturated and low PUFA.

Cutting the fat in half would be fine, but since I’ve never made it, I’m not sure if it would mess up the ability to be formed into bars. If there isn’t enough fat, then it might be crumbly.

The problem with flax would be mixing it in. If you added it in when it’s hot, you could damage the sensative flax oil. If you let it cool first, then you have to really work the oil in. But I guess you could do it that way.

I’m going to get a meat dehydrator and make my own. I think it would cost waaaay too much to buy pre-made jerky.

I guess you really could add whatever you want into it, but you just have to make sure it tastes ok :slight_smile:

I just think this would be a much better option than a protein shake that would be easy to take with you just about anywhere. Much better than a protein bar, too.
