Microwave Potato Chips: Who's Going to Try This?

I will. I had a huge delmonico at this place in Sarasota and they served it with long sliced potatoes that seemed just to be brushed with olive oil, seasoned with salt and pepper, then baked.

When I got back, I brought a pastry brush to make my own.

Adding a microwave to this equation sounds like a win to me.

Very interesting. I’ll have to try it with sweet potatoes as well, see how that goes.

Ok so I did it. here is what I did.

Heir loom potatoes (the blues are awesome for chips).
Sliced as thin as I could prolly 1/16-1/8" (mandolin would be sweet)
brushed a plate with veg oil (ran out of olive)
laid the slices on the plate making sure not to overlap, then flipped them (to coat both sides)
cover with 1 sheet of paper towel microwave for 2 mins
flip microwave uncovered for another 2 minutes
transfer to steel bowl
add sea salt and adobo seasoning while still hot, toss in bowl let cool.

effing AMAZING

I made these tonight with sweet potatoes and they were great. The only issue that I had was that it took 4-5 times in the microwave to get through the whole sweet potato. If you were doing a lot of these might be easier to just put them in the oven all at once.
