Does making ghee damage the butterfat in any way? Ghee is made by melting butter on a stove until the milk solids seperate from the milkfat and the water, then letting the water boil off. At this point you can strain the milk solids out to get clarified butter, but if you keep cooking and brown the milk solids, the flavor deepens greatly and you can filter it to get ghee. Very common in Indian food. I use it all the time to saute over high heat because my other oils can’t take the heat.

dev, coconut oil is higher in MCT’s then saturated fat from animals. MCTs are metabolized differently and are more easily used as a source of energy(from my understanding)

Saw your post. Saturated fats do differ metabolically. For example stearic acid in beef doesn’t seem to be as atherogenic (heart disease inducing) as others.

I think that the way Westerners consume saturated fat - that is, with plenty of insulin-inducing carbs - worsens the health risks involved.

Still, I’m not quite liberal enough to start consuming lots of saturated fat, regardless, including tropical oils (palm oil, coconut).
