I must say Steely, you really got it right. I went to Italy 2 months ago and saw how little carbs were being consumed. I say this compared to what people here eat with regard to bread, potatoes, rice, and the processed crap. The meals you are sharing are just awesome, and hope to try some very soon.

Sono nato a CT, USA, pero’ la mia famiglia viene da Napoli. Sono stato spesso a Roma, e’ bellissima!!

Alright… Next up–

Sesame and Butter Roasted Lemon-Garlic Chicken and Green Beans

This is really tasty. As you can imagine, I’m a garlic freak, and this is loaded with nuggets of flavor.

The nutty, buttery, lemony, garlicky beans are the real star of the show.

I cannot be responsible for any orgasms at the dinner table as a result of this dish… or, can I? …


Ok, los ingredientes (That’s from La Cocina Anabolica Espanol):

You’ll need some breasts (no prob for OG), but obviously we’re talking chicken breasts you pervs.

A limon
Some green beans (french cut cook nicer)
A head of garlic
Butter (I used a quarter stick-- what’s that like 2 or 3 T?)
Garlic Powder
Parsley
Rosemary
Black Pepper (I used McCormick Seasoned).
Carrots optional, but tasty
New Red Potatoes sliced are great addition (I didn’t have any)
Scallions or Onions

Secret ingredient: Toasted Sesame Oil

A pan to sautee in and a baking dish. I used my cast-iron skillet for both-- you’ll see what I mean.

Pre-heat oven to 450 F.


Next, peel all the cloves of garlic from the bulb. Honestly, you can’t have too much garlic for this dish. Mo’ biggah, mo’ bettah.

I smash the cloves with my cleaver knife then cut some. Some I just leave smashed.

Put a bunch of sesame oil in the pan and heat up (I use medium heat to sautee). When the oil is heated, add the garlic and keep those puppies MOVIN’!

As the garlic starts to cook and brown some, turn the heat down to low and add the butter. I used a quarter stick, you may use more, (or, less, I guess…).

You do not want to burn the butter. I keep it moving with the knife.

Oh yeah-- cut your lemon in half before you start this because we’re gonna squeeze it in the pan, next and you don’t want to wasted time with the butter cooking.

“Squeeze me baby, till the juice runs down my leg,
I said squeeze me baby, till the juice runs down my leg.
The way you squeeze my lemon,
I … I’m gonna fall right out of bed, yeah. Hey!”

You wanna squuueeeeeezzzzzeeee that lemon with everthing you got!!!

Both halves if you wish.

After you add the lemon juice (try to get it all in the pan, and don’t let the juice run down your leg)… transfer it to a temporary bowl.

Note: If you’re using another baking dish, you don’t need to do this-- just take the pan off the heat.
