Lay that chicken DOWN, BABY!
On the lemons.
Add your spices. I don’t use salt, but if you use it you can add some (or wait until it’s done and on your plate to add salt).

Go easy on the Rosemary. It’s a primary herb and you don’t want it to overpower in this dish-- “Rosemary Chicken” is another recipe ![]()
I just do a couple pinches on each breast. (Ba HA!)

Now, remember that garlicky, butter, sesame ‘sauce’ we made?
Pour that over those beautiful, perky, breasts. It’s like ‘foodkakke’…

Last, put on the scallions and put in the oven!
If you used an onion, you could either dice it coarsely and put it in with the beans, or slice it and put the slivers on top like the scallions (or both!). You don’t wan’t to overpower the other flavors, though.
I just put a piece of aluminum foil on top of the pan in the oven. Keeps the chicken from drying out.

Cook for about 25-30 mins (at least check it then). Should be about done!
Don’t be afraid to spoon that butter sauce over the chicken while it’s cooking. If it’s not quite done, take the cover off, baste it and cook for another 5 minutes until done.

SteelyD? you said your crockpot was down. Do you do any slow cooking in your cast irons or are you stopped for anything right now? I have a crockpot and I haven’t used it for a while.
Yeah, I just use the cast iron pan or corningware for slow cooking.

Bacon Wrapped Chicken Breast and Blue Cheese Slaw
Ok, so here’s my lazy man’s chicken lunch. I didn’t really plan it, so not a lot of shots like usual.
I just started frying some thick cut hickory smoked bacon, then I remembered that I had chicken in the fridge.
I just took a couple pieces and wrapped the chicken in them. Put EVOO in a corningware dish, then put the wrapped chicken in. Had a half pepper sitting out and literally just stuck it in the dish, covered it and baked it at 425 for about 30 minutes or so (your time will vary). Added typical spices-- garlic powder, seasoned pepper. Definitely don’t need salt with all the bacon.
Took advantage of the late afternoon sun lighting for the food porn shots. Kinda like ‘artsy’ food porn.
So, as I’m baking the chicken and frying the bacon, I thought, I should eat some kind of ‘vegetable’. But was lazy and didn’t feel like doing much.
What’s easy?
Cole slaw.
I buy shredded coleslaw mix from the market (we have a local brand that I like), so I got a bunch of that and instead of mayo and other ‘coleslaw’ stuff, I just added a couple tablespoons of blue cheese dressing and mixed it in.

Porn slaw.
I added in some cherry tomatoes and the bacon I was frying.
