I baked it since the weather was nasty the day I made this, grilling would be almost TOO good… Put some tin foil down on a cooking pan and brush on some EVOO. Put the salmon on there and coat that sucker in the spinach concoction. I baked a 1.25 lb piece for about 20 minutes at 375*F. It would probably be impossible to over cook this piece of fish with all the oil on it.
when it’s done baking, throw some more romano or pecorino on there for good measure.

I didn’t include the steps for the broc w/ cheddar sauce since mine turned out crappy. I do think broc w/ some cheese would be a good compliment though ![]()

Another mundane, but very important dish… Steak (and vegetable!)
This is the backbone of my diet (steak, fish, chicken).
In this case, two half-pound strip steaks.
First marinated in fridge over night in EVOO, chili powder, garlic powder, parsley, and what was left of the scallions from the previous dish.
Fire up grill!
Again, this is sub-freezing grill weather. My baby fires up ALL YEAR LONG-- rain, wind, snow, sleet!

Note-- this literally took about 15 minutes or so to cook, and less than 5 minutes last night to prepare (ie marinate and throw in fridge).
I cooked these two steaks (~2:30 PM), and had another one previously about 11AM. So 3 steaks prepared the night before, 10 min. in the late AM to cook one, 15 min in early PM to cook the others. Will eat the little bit left over tonight after workout, plus whatever else.
No Excuse not to eat good food…

What I do when I feel like eating Italian:
8-10 oz chicken breast
1.5 cups of all wheat penne pasta
1 whole can of italian recipe tomatos low sodium
I put all of it an plate and watch Mario Batali on Food Network. If you close your eyes, it tastes like chicken, with bland ass pasta and stewed tomatos.
You mentioned you have crockpot recipes. Is there any chance you could show me something wonderful as I just bought the value pack of chicken thighs? I know breasts have fewer calories but I just don’t really like them!
My crockpot is in the crapper right now (read: dead)… sorry!
