Kale Recipes

I have two burners, a microwave, and a whole buttload of kale. I got me some num num spices too, how should I cook this stuff?

Portuguese Kale soup?

1-2 lbs fresh kale
1 large yellow onion
3 potatoes, peeled
2 chourizo or linguica (spicy smoked sausage, sliced
8 cups chicken broth
1/4 cup Olive Oil
6 cloves garlic, peeled and crushed
1 can Cannelloni beans
1 bay leaf
1 hot pepper, seeded
1/3 teaspoon paprika (or num num spice?)
Season with salt, & pepper to taste

Saute onion in 1/4 cup of olive oil.
Add sausage. Saute some more.
Add chopped garlic. Do not allow garlic to brown.
Add liquid and simmer for 10 minutes.

Rinse kale thoroughly and tear the leafy portions from the stems. Tear into leaves bite-size pieces. Discard stems.

Add potatoes, kale, and simmer additional 30 minutes.

Add beans.

Eat.

I put kale in smoothies and salads. I’m actually eating some right now.

You can just boil or steam them and then top with lemon juice and olive oil.

Yeah sounds like boiling is the way to go in a pinch. That soup looks amazing though, definitely gonna try that out

and paprika is definitely on my list of num num spices
