Homemade Extra Lean Pork Sausage

I’ve been following Shugart’s food photo blog for the past week. He mentions that he eats extra lean pork sausage for breakfast. Has anyone seen this anywhere as I’ve been unable to find it? If so what stores and brand?

I’ve seen low-fat pork sausage, but never extra lean. The “low fat” is usually all of 3 grams less fat per serving than the real stuff.

I do see turkey sausage everywhere, which isn’t as tasty, but works well when cutting calories.

Found a recipe for home made breakfast sausage while surfing the net:

What you need to make homemade sausage patties
1 to 1 1/4 pounds lean ground pork
1 tbsp very finely diced onion
1/4 tsp ground white pepper
2 tbsp parsley flakes
1 tsp ground sage
1/4 tsp chervil
1/4 tsp marjoram
1/4 tsp savory
1 tbsp water

Place all of the ingredients in a large bowl and mix well with your hands. Form into 5 to 10 patties depending on your preference. Cook over medium low heat in an ungreased non-stick skillet until browned, turn and brown the other side.

I’m going to give it a try this weekend.
