Had some from Austin… blown away. Hard to find in Missouri.

Costco sells them.

I’d fuck it up

You put them on a smoker at 220 for 3 hours, take them off and then eat them. If you can’t figure that out, please surrender your driver’s license

No smoker just a gas grill as of now

You can cook them in an oven

I have even air fried them

No luck air frying stuff… turned out awful. I mainly grill or skillet cook everything but need to branch out. Thnx for the tips

Interesting

You CAN make it more complicated than that, and a lot of dudes do, but they’re really using ribs as an excuse to eat sugar. I keep it just salt and butter.

I DO spray my ribs with duck fat every 30 minutes (basically when I swap out the pellets) to keep them moist, but that’s about my only “trick”. If I need to wrap them, I cover them with ghee and then wrap them in foil.

If you had them in Austin, they were most likely short ribs. The big, meaty dinosaur looking ribs.

With a smoke tube you can do them on gas.

IMO best practice is low and slow at 225 until an internal IT of 200, or a probe goes in like butter which is normally 6-8 hours. pull and rest wrapped in butcher paper for 1-3 hours in a cooler.

Traditional seasoning is S&P applied liberally, sometimes you’ll see garlic and cumin in the mix.

Thats pretty much it.

Just don’t forget to peel the membrane.

Low and slow with a rest lets all the connective tissue break down.

I guarantee you could make competition ribs on your propane with a smoke tube, or even better a chip box.

Got a whole rack of those in my freezer from piedmontese waiting for a special occasion.

…and a Tomahawk.

It’s a GOOD time to be gaining weight.

Thank you ! You, too. I’ve been crushing my workouts. I’m a big proponent of going to failure on last work set of an exercise…. sometimes beyond (drop sets, rest pause, negatives), but limited to prevent overtraining.

Hell yeah it is. Shorts, tomahawks and briskets are my siren song.

You need some carbs for that, brother.

Given that I took first place, set 2 state records and carried a 220lb sandbag for nearly 5 minutes, I very much disagree
