Durian opens up ANOTHER side category discussion of “most overrated food”, because the entire time I was in Malaysia all I could hear about was this “god fruit” that smelled absolutely horrible but was TOTALLY worth it because of how exquisitely delicious it was.

Sous Vide corned beef flat. Over 24 hours at 155. It came out tender but sliceable, flavor was good, but I totally botched the sear on it. Went with the instant pot again with tallow, and got good color on the bottom, but then went to do the fat cap, kept it on there for WAY too long and lost pretty much all the seasoning and the top layer of the cap as it stuck to the pot.
The plus side is that it was still yummy enough that my family approved (the Valkyrie has actually had a decade long hunger strike against corned beef, as the one we bought before this one was spoiled, and the smell of it coming out of the bag scarred her for that long, so the fact she enjoyed this was huge), but I’m glad I did a practice run before the big day to learn some lessons.
Another big one being that I need to make WAY more than 4lbs of corned beef…
