I am a lousy cook and was hoping some one could provide me with some good recipes for chicken

I don’t cook. I microwave. So I buy a lot of pre-cooked chicken breasts, beef patties, stuff like that. You can get strips of chicken made by Louis Rich, Tyson and many other companies that are pre-seasoned and cooked. A minute two in the microwave and you have 50 grams of protein. I add salsa, toss it on top of a romaine salad, sprinkle it with fat free cheese, whatever. The pre-cooked stuff is more expensive but saves me time.

I know what you mean, now that school has started I’m never at home and have little time to cook. I started cooking enough food for a couple days in advance. So when I’m rushing out of the house I just throw it into a small cooler and microwave it later. I just throw it all together like chicken, rice, and corn and I want to try steak, broccoli, and rice. Hope this gives you some ideas.

Easiest and fastest way to eat in 10 min. Morning before go to work, toss chicken breast and 1-2 tablespoon Marinade of choice (Heinz 57, A-1, Terryaki sauce, lemon juice with salt and pepper)in ziplock bag, bowl what ever together in fridge. Get home from work, turn oven to broil, wait go take dump, change out of monkey suit. Come back, oven preheated, do breast about 5-7 min a side. TURN OFF OVEN. Take out, eat over salad, rice, side of vegetables whatever. Also for faster results slice chicken into strips in the morning put in bowl with taco sauce. Come home put 1 tsp olive oil in frying pan add chicken 5 min have chicken burrito meat just add tortilla, cheese and sour cream.

For something a little more fancy for dinner that takes all of 15 minutes, I take 1 or 2 frozen boneless chicken breasts and defrost in the microwave. Warm up a pan with 1 tablespoon olive oil, some sliced mushrooms, 1 teaspoon chopped garlic, pepper and oregano to taste. Don’t let the pan got so hot that it smokes. Pull out the chicken, cut in thirds and throw in the pan with 1/4 cup white wine. Leave on one side until they are cooked around the edges (7-8 minutes), then turn over and cook until lightly brown. Push to one side and add 10 to 12 spinach leaves in the other. Swish around in the pan with some more pepper until they are wilted (about 45 seconds if the pan is hot enough). Off heat and eat. No calories from the wine, 'cuz the alcohol has evaporated. The spinach is only good for that meal, but the chicken is even better the next day cold.

Preheat oven to 350.
Place 1-2 lbs. boneless, skinless breasts or tenders in oven-safe pan.
Pour 1-2 jars Pace picante sauce over chicken.
Cover and heat for 1-1.5 hrs.
Simple, effective, and (almost) foolproof. Try not to burn your house down.

The best present I ever got isa George Foreman grill. It does one hell of a job on chicken breasts, cooks them in like 15 minutes. London Broil it will cook in a little over 10. If you don’t have one and have no other way to grill meat … these suckers are great!

Easy time saver…put chicken breast in a zip lock with any marinade you choose. Squeeze out as much air as possible. Let marinate for 24-48 hours, rotating bag every 12 hours.
Spray baking pan with pam. Pour chicken and marinade in baking pan. Cover with foil and bake in a preheated 350 degree oven for 30 min. If you want you can start a pot of rice at the same time you put chicken in oven. It will be ready at the same time. Just set the timer on the oven. No need to keep checking it.
