I was feeling pretty good and might have got all 5 sets…WHEN…old dude wanders over and has to get to the air-compressed machines to do lat pulldowns and other strange things…he sits downs and appears to have an orgasm he is grunting so hard…then he stands up and lets out a HUGE lion type yawn…then he goes and stands and reads the paper…I moved my bar out of the way for fear of 1) killing him by hitting him during the clean) of 2) having him accidentally bump into me and hurt me.
SO…I rack the bar on the dip handles I’ve been using to hold the weight when I squat…move in to lift it and see the dip bars are where my hands go…so…I take it off the bars and adjust my grip and get a set of 4 and then a set of 3…

I found some hog jowls in my freezer so I’m trying to make bacon…or maybe it’s guanciale…

Anyone ever tried this before? I basically covered it in salt, pepper, brown sugar and rosemary…got the recipe from a book called The River Cottage Book of Meat. It’s a great book.

I’m supposed to drain the liquid off every 24 hours and add more of the salt mixture…it’s been about 36 hours and no liquid…maybe it’s because I’m using jowls instead of belly…I don’t know…either way…I’m going to put it on my smoker this Saturday with very, very little heat and smoke it for a long time…hopefully something edible will remain.
