8 Day Bike Trip, Need Help!

I will be leaving on a 400 mile 8 day bike trip this week, i do not want to lose the gains ive made over the past few months. We will be biking 40-70 miles a day. I plan on having a protein bar for breakfast, 32g protein, 10g fat, and 41g carbs. Lunch will probably be sub sandwiches at a sheetz gas station or something like that, I currently weigh 150lbs and plan on gettin at least 1g of preotein per lb of bodyweight, but how should i control my carb intake, obviously i’ll need a fair amount but im not sure how much, for meals we will be eating at sub shops like subway etc,or other local restaurants, please give me some sugggestions! thanks
